Healthy Chocolate Chip Pumpkin Protein Doughnut Recipe

I don’t know about you, but I am a huge fan of doughnuts… especially *HEALTHY* doughnuts, and this recipe has become one of my fall favorites. I can’t say no to pumpkin! I love to make a batch on Sundays to have for snacks or desserts throughout the week. Take a look below and let me know if you have a chance to try them! 😀

Healthy Chocolate Chip Pumpkin Protein Doughnuts

Ingredients
  • 1 cup canned pumpkin
  • 2 tablespoons pure maple syrup
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin spice
  • 1/2 cup white whole wheat flour
  • 2 tablespoons Trader Joe's vanilla pea protein powder
  • 2 tablespoons semisweet chocolate chips

Ingredients
  • 1 cup canned pumpkin
  • 2 tablespoons pure maple syrup
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin spice
  • 1/2 cup white whole wheat flour
  • 2 tablespoons Trader Joe's vanilla pea protein powder
  • 2 tablespoons semisweet chocolate chips
Healthy Chocolate Chip Pumpkin Protein Doughnuts
Instructions
  1. Lightly grease doughnut pan (I use TJ's coconut oil spray.)
  2. Combine dry ingredients in one bowl.
  3. Combine wet ingredients in separate bowl.
  4. Slowly add dry ingredients into wet, mixing together, but not over mixing.
  5. Pour batter into doughnut pan, then sprinkle chocolate chips on top.
  6. Bake at 350 for 15 minutes. Remove from oven. Enjoy!

Trader Joe’s run! 🛒 This time I wised up and Trader Joe’s run! 🛒 This time I wised up and got two bags of riced cauliflower and butternut squash risotto instead of just one. 🤗 Also snagged my favorite fall tea, their harvest blend. If you’ve never tried it, I highly recommend. It’s decaf and has the most amazing fall flavor that kind of reminds me of apple cider in a way. What has been your favorite TJ’s discovery lately?!

Brunch in BK yesterday. 🍳 Had @evelinarestauran Brunch in BK yesterday. 🍳 Had @evelinarestaurant’s radicchio, pear and pistachio salad, which was the most amazing fall flavor combo. I can’t recommend this place enough and they had tonssss of cute outdoor seating. 🖤
Iced oat milk latte with my @nespressousa. Used a Iced oat milk latte with my @nespressousa. Used a @rosso.cafe caramel capsule. 🤤 Do you have a Nespresso? What capsules do you use? I’m super curious to try a bunch of different kinds now that I have a machine. ☕️
One of the reasons I love TJ’s pumpkin o’s 🎃 so much is because they are PACKED with the most amazing, natural-tasting pumpkin flavor. I feel like it’s not an easy flavor to recreate in different products but TJ’s has it down. I like to enjoy the o’s in a ton of different ways:

• With vanilla almond milk (super tasty because the flavor soaks into the almond milk, giving you the most amazing ‘cereal milk’ to finish at the end)
• As a smoothie topping
• In a DIY trail mix with raw almonds and pumpkin seeds
Hello #firstdayoffall. 😍🍂 This was the view Hello #firstdayoffall. 😍🍂 This was the view from the Catskills last weekend where I stayed in Hunter, NY. I was so excited to see the leaves starting to change colors up there already. I brought my Nespresso with us to our Airbnb and made these oat milk lattes every morning. ☕️ So good! I can’t wait to make a pumpkin version of these this fall.
